01 / ABOUT THE PLACE
About this place
Delicate bits of pork back fat float across the surface of the bowl, resting over a clear, non-emulsified broth that layers crisp soy sauce against rich pork stock. Ramen Kanda serves a bowl free of overwhelming heaviness or intimidation, striking an easy harmony between sharp shoyu notes and the mellow sweetness of pork fat. The thick noodles have a supple, gentle chew rather than rigid firmness, carrying just enough salt and fat to make each bite effortless through to the end.
Tailoring the Bowl with Free Adjustments
Diners can customize complimentary toppings to suit their preference, choosing their amounts of boiled vegetables, minced garlic, extra fat, and flavor intensity. One can pile on bean sprouts and greens to soak through the soup, or dissolve fresh garlic into the broth for a punchy kick. With the owner's calm, friendly manner, placing these custom requests feels approachable even for those unfamiliar with Jiro-inspired styles.
Extra Toppings for Texture and Flavor
Beyond the complimentary adjustments, paid toppings offer ways to alter the character of the bowl. Options include bite-sized quail eggs, fragrant black bara nori seaweed that dissolves into the soy broth, and crunchy bamboo shoots (menma), as well as raw egg for dipping the noodles sukiyaki-style. For more tender pork flavor, additional chashu slices are available, along with whole chashu rolls for takeout that must be reserved at least 2 days in advance.
The dining room is arranged primarily around counter seating, making it comfortable for solo diners. Payment is handled exclusively in cash via the ticket vending machine, and seat reservations are not accepted. The shop operates lunch and evening services on weekdays and lunch only on Saturdays, providing a welcoming space to focus on a bowl tailored to one's liking.
